Make Vegan, Gluten-free Mini Pizzas at Home!

Have you guys ever seen/eaten those Celeste mini pizzas that you can buy frozen?

My brothers are OBSESSED with them, so they are often lying around in our freezer. I decided to recreate something similar-mini pizza rounds but HEALTHY pizza rounds. Yes, it’s true, you can have your pizza and eat it too!

Remember, I don’t think there’s anything wrong with splurging and having some real pizza every now and again, but if you’re looking for something delicious and guilt-free, then you should try this recipe. They are super easy, fast, and fun to make!

Here is what you will need:

  • 1 Eggplant
  • 3 Tomatoes
  • Fresh Basil
  • Oregano
  • Marinara Sauce of choice
  • Olive oil
  • Vegan cheese (or real cheese, but I prefer to stay away from dairy)
  • Salt/Pepper

Here is what you do! It’s super simple.

  1. Preheat oven to 400 degrees.
  2. Peel and slice the eggplant up into the same length sizes, and do the same with tomatoes.

  4. Spray a baking dish with non-stick spray and arrange the eggplant in the dish with the tomato slices on top.
  5. Drizzle olive oil all over the vegetables.IMG_8510
  6. Season well. Add oregano, salt, and pepper. You could also add parsley and any other herbs you like.
  7. Sprinkle the cheese on top. I added fresh basil at the end of cooking time.img_8513.jpgIMG_8517
  8. You could add some warm Marinara sauce on top, or have them by themselves. They are great either way!

They should come out looking something like this, and smelling amazing. I ate these on top of a bed of arugula and added some eggplant marinara sauce and hemp seeds for added protein. So yum! This meal is high in fiber, and antioxidants from the vegetables including lycopene for the tomatoes which encourages skin rejuvenation and glow. If you use vegan cheese, this adds plant-based protein.
